Cheesy Veggie-Stuffed Sweet Potatoes

These cheesy veggie-stuffed sweet potatoes are a creative, gluten-free dinner filled with flavor and nutrients—great for teens looking for something fun!
Ingredients
2 medium sweet potatoes
1/2 cup chopped bell peppers
1/4 cup chopped onion
1/4 cup canned corn (drained)
1/2 cup shredded mozzarella cheese
1 tsp olive oil
Salt and pepper to taste
Instructions
Pierce sweet potatoes with a fork and microwave on high for 6-8 minutes, or until soft.
While potatoes cook, sauté the bell peppers, onion, and corn in olive oil until tender.
Cut the sweet potatoes open and use a fork to fluff the insides lightly.
Spoon the sautéed veggies into the sweet potatoes. Sprinkle cheese over the top.
Microwave again for 1-2 minutes to melt the cheese. Season with salt and pepper, then enjoy!
