Cheesy Veggie-Stuffed Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes

  • 1/2 cup chopped bell peppers

  • 1/4 cup chopped onion

  • 1/4 cup canned corn (drained)

  • 1/2 cup shredded mozzarella cheese

  • 1 tsp olive oil

  • Salt and pepper to taste

Instructions

  1. Pierce sweet potatoes with a fork and microwave on high for 6-8 minutes, or until soft.

  2. While potatoes cook, sauté the bell peppers, onion, and corn in olive oil until tender.

  3. Cut the sweet potatoes open and use a fork to fluff the insides lightly.
